Why it doesn't work to replace a zygote's gamete with the father's or the mother's? Say, just after fertilization, take the zygote (first cell), remove the gametes and replace them with the mother's (if you want a girl) or the father's (if you want a boy). Or alter the said replacement gamete to make it compatible with the zygote.

that's too creepy for words. if you really want to make sure you get a boy or a girl, adopt one. otherwise, it's too Dr. Frankenstein.
